Great job! The only issue is that you have ended with "End of Chapter 5" rather than "End of Section 6."

There are quite a few chemical formulae is this chapter, some of which I feel are unnecessary. For example...
  • "...while the proportion of P_2_O_5 attains a maximum..." - say Phosphorus pentoxide instead
  • "The so-called "caffetannic acid" is really a mixture which has among its constituents chlorogenic acid (C_32_H_38_O_19), which is not a tannic acid..." - omit the formula entirely
  • "It also has been claimed that viridic acid, C_14_H_20_O_11, is present in coffee." - omit the formula entirely
  • "Caffein, thein, trimethylxanthin, or C_5_H(CH_3)_3_N_4_O_2, in addition to being in the coffee..." - omit the bolded part of the sentence
  • "Gorter states that caffein exists in coffee in combination with chlorogenic acid as a potassium chlorogenate, C_32_H_36_O_19, K_2(C_8_H_10_O_2_N_4)_2·2H_2_O, which he isolated in colorless prisms." - it's just getting ridiculous now :lol:
I also wonder if I could omit sentences or parts of sentences that reference tables that I'm not going to include, viz...
  • "Salts of an unstable nature are formed with caffein by most acids. The solubility of caffein as determined by Seidell is given in Table I."
  • "As may be seen in Table II, the caffein content of coffee varies with the different kinds..."

Hello, and thanks for asking.

1) Please, do not omit the formulas. This is after all the chapter on the chemistry of coffee, and I suppose formulas are to be expected.
2) Yes, since the tables are not read, the references to them will make no sense.
