I always copy Gutenberg texts into WORD Files for reading. Is there a way to do that with Internet Archive texts?

Not really. Archive has a "text" format, but it's the OCR of the scan, not proofread or corrected, so it's always full of errors.

If the original text is a novel, I tend to d/l the Archive PDF. If the work is a short story published before 1923, UNZ has many of them available in downloadable PDF format. Files are reasonably small if space on your computer is an issue.
