Request for Irish dialect expert advice

There is an old Australian short story by Henry Lawson called The Hairy Man

Among other character voices, it involves two Irish accents, apparently from different parts of Ireland. Their difference is described as follows: "Where Mahoney said “shtone” Foley would say “stawn”"

There are several other speeches, more or less accurately reproduced by phonetics, in the body of the text.

My request is twofold:

1) Can anyone identify these two accents? Are they Eire vs Northern Ireland? Or is this a differentiation within Eire itself?

2) Would someone skilled in Irish accents be willing to deliver the two characters', Mahoney and Foley, speeches of this short story for me? I can provide the rest of the story myself. It's just that I cannot, for the life of me, do a decent Irish accent.
