Instructions here: You don't install it - just drag and drop it into the Audacity plugin folder

The next time you open Audacity, go to the Tools menu, click on Add/Remove Plugins, scroll down until you come to Replay Gain and Enable it. Once it is enabled, you will find it under the Effect menu - down towards the bottom of the list.
You don't need this unless you would like to check and adjust your volume in Audacity before you export to mp3. Some users prefer that to running files through Checker to check the volume.
If I recall correctly, the volume on your test recording was OK.
Don't stress over every little detail. You don't need to be an expert at everything. Just start doing some recordings and learn as you go.
