I was thinking of doing a book that would be about 25 sections long if I break up each section into twenty minute reads. So far this has been my favourite method.
However, I could easily do the work in 10 sections if I preferred longer recordings.
Is there any rule on this? Could I hypothetically do fifty sections in 10 minute recordings if a work was long enough?
How many sections is too many?

The limit on sections is 255. Archive cannot handle more than that.
If you want to break them into 20 minute sections or even 5 minute sections, you can do so, no problem. Your listeners might get a bit cheesed at the constant LV intro on short sections, but there's nothing to say you cannot do that.
