I know that I shouldn't read the example given because it isn't long enough, but do I have to read something that's in the public domain for my test? And does it have to be EXACTLY one minute, or is a few seconds under/over acceptable?

You can read the example text given. In fact, we recommend it because it's got P's and TH's and things that can be problematic with bad mic placement.
The recording doesn't have to be a minute. The test name is a bit of a misnomer.

... not to mention that you could just read the same text again (and again) to fill the minute.
