I've discovered a work on Gutenberg which is about several composers - but it has no chapters - and is continuos - one composer followed by another. The whole work at a guess might be about one hour to 1.5 hours in length.
If I record this and have it set up - should I use each composer's section as a chapter, or a section, so it can be broken up into 10-20 minute chunks? There are seven composers and the link is: http://www.gutenberg.org/files/18138/18138-h/18138-h.htm
(Its about 40 pages).

Yes, you can do that. I actually see in the gutenberg text, that the text is divided by composer; it has a table of contents. So it will be easy to set up in sections.
