So I started recording Part 2 Chapter 3 and the beginning got cut off. Would someone here be able to answer how to rerecord the audio to the beginning to the file in Audacity?

I think you can record in a new Audacity file and then copy and paste it where you need it in the existing Audacity file, either using the menu Edit options for copy and paste, or the short-cuts Ctrl+C and Ctrl+V.
I'm sure there are other ways, too, like recording directly on the existing file, which creates an extra track that needs to be deleted afterwards, but you do the same thing with copying and pasting.
