I looked up cochineal that was used in some of the fruit compote. It's ground up BUGS ! I guess they still use it as a food dye.

These recipes constantly amaze me as to the many steps required to make one recipe and the lack of clear measurements and directions-- such as bake in a cold oven. Did all the women and housekeepers just know what that meant? lol

And all the ingredients we rarely use anymore like rosewater. so interesting

Few more sauces.

For one, you want just enough garlic flavor as is obtained by waiving a clove of garlic in the neighborhood of the pan, but don't let it actually touch the sauce, that will be too much garlic flavor.
