Have you heard the story about Parmentier--how he got French farmers to adopt the potato by having soldiers guard a government field of them during the day, but leaving them unguarded at night?

I had not. I'd never heard of him at all and yet it is to him that we owe pommes frites. It's a tribute to the writer and the reader that, though this was a long section, I was surprised and disappointed when it came to an end.
