Dunbar is a little difficult, since the "complete" collection effectively makes it unnecessary to do all of his collections individually. But I'll put them all there for posterity's sake regardless. :-)

This is a collection of fifteen addresses delivered by Prof. Crogman over the course of thirteen years. William Henry Crogman was a professor of Greek and Latin at Clark University in Atlanta, GA. This book also includes a detailed biographical sketch of the author.

A large selection of stories (both fiction and non-fiction, from what I can tell) for children. I can't be sure whether all of the various authors were African-American, but it seems that at least a large majority were. Some of the sections are extremely short and may be better combined with the ones before or after them. One is a 31-word poem. But this looks like it would be really nice for a group project.
