I started with a children's story - I think lots of people do. The advantages are that the language is a bit simpler so there is less for the tongue to trip over, and they also tend to be shorter, which is good because the first time you edit a raw recording it can be a little bit overwhelming. Ok, the consensus so far is jah-sinth - not sure how to render it phonetically, but like http://www.pronouncehow.com/english/jacinth_pronunciation with the stress slightly on the first syllable instead of heavily on the second.
