Agreed - but wanted to make sure Sarah was ok to check them first, as per my earlier post

Re: [COOKERY] A Guide to Modern Cookery by A Escoffier - rg

Hi Sarah I think it would be better if the paragraph numbers are included as it makes it easier for the listener to navigate what could otherwise be a confusing text. Would it be a pain for you to check these? If ok, could I ask you to PM our current readers and let them know? I'll put a note in the...

Re: [COOKERY] A Guide to Modern Cookery by A Escoffier - rg

Hi Tristan That sounds great. I'm glad you've found us! I'll reserve the sections for you - please come back to me when you've had your test checked OK, and I'll register them to you. One note if caution - it can take longer than you think to record sections, so if you find you've taken on too many ...

Re: Compress or de-amp?

No - i'll just force-feed you quenelles

I get that - but if you've just recorded something that is perfect except for being at 92dB it seems like
an easy option. My stuff doesn't clip at that level.

Will do. Wasn't sure if that was the PL's job.

Re: Compress or de-amp?

Thanks guys.

So my take-out from all this is that to compensate for having my mic gain too high I should de-amp (not compress), as I have been doing, otherwise I risk losing dynamic contrasts in the passage.

Thanks, Chris

Compress or de-amp?

Can someone explain the difference for me?

I tend to reduce overloud passages by using amplify with a negative amount.
I tend to think of compress as losing information.

But others use compress for the same purpose.

Which is better, and why?

Thanks, Chris

Sorry Ruth - what's your point? I said I'd reduce the volume.

Thanks, Chris

Re: [COOKERY] A Guide to Modern Cookery by A Escoffier - rg

Hi Sarah

Thanks. Will de-amp this section.

Always found quenelles much overrated personally. I remember having quenelles de brochet (pike) in a Michelin starred restaurant in France many years ago and being completely underwhelmed.

Maybe Escoffier can change my mind!
