I would like to do Red Fox, by Charles G. D. Roberts. I am not 100% sure it's in the public domain, and would like assistance in checking this. It was published in 1905 and other works of his are on Librivox, so it seems there's a good chance it is in the public domain. It's one of my favourite book...
